Prepare Pizza Filling:
-Chicken boiled & shredded 200g (chicken boiled with salt,pepper & soy sauce) -Shimla mirch (Capsicum) cubes 1 Cup
-Corn kernels boiled 1 Cup
-Pyaz (Onion) chopped 1 medium
-Lal mirch powder (Red chilli powder) ½ tbs or to taste
-Dried oregano 2 tsp
-Lehsan powder (Garlic powder) ½ tbs
-Lal mirch (Red chilli) crushed ½ tbs
-Kali mirch (Black pepper) crushed ½ tsp
-Himalayan pink salt 1 tsp or to taste
-Pizza sauce ¼ Cup Substitute: Tomato ketchup 2-3 tbs or Hot sauce 1-2 tbs -Mayonnaise 3 tbs
-Fresh basil leaves chopped 2 tbs -Cheddar cheese grated as required
-Mozzarella cheese grated as required
Prepare Samosa Dough:
-Water ¾ Cup
-Ghee (Clarified butter) melted ¼ Cup
-Himalayan pink salt 1 & ½ tsp or to taste
-Ajwain (Carom seeds) ¼ tsp
-Zeera (Cumin seeds) roasted & crushed ¼ tsp
-Maida (All-purpose flour) sifted 3 Cups
-Water 1-2 tbs if required
-Ghee (Clarified butter) 1 tsp -Cooking oil for frying Directions:
Prepare Pizza Filling:
-In a bowladd chicken,capsicum,corn kernels,onion,red chilli powder,dried oregano,garlic powder,red chilli crushed,black pepper crushed,pink salt,pizza sauce,mayonnaise,fresh basil leaves & mix well.
-Add cheddar cheese,mozzarella cheese,mix well & set aside.
Prepare Samosa Dough:
-In a bowl,add water,clarified butter,pink salt,carom seeds,cumin seeds & whisk well.
-Add all-purpose flour & mix well.
-If required,add water,mix well & knead until dough is formed.
-Grease with clarified butter,cover with cling wrap & let it rest for 20 minutes.
-Knead dough again until smooth.
-Take a small dough (70g),make a ball & roll out with the help of rolling pin.
-Cut the rolled in two halves. -On one side of dough,apply water on edges,join two sides/edges to make a cone & press gently to seal the cone. -Fill the cone with prepared pizza filling (1-2 tbs),apply water on the edges & bring the edges together and seal edges with water. -Prepare the remaining samosas similarly (makes 18). -On a tray,place samosas and freeze overnight or until firm then take out and can be stored for up to 1 month in freezer.
-In a wok,heat cooking oil (150C) & fry samosas on very low flame until golden & crispy & serve!
