Dense Bean Salad With Spam (https://www.instagram.com/katlieu) Delicious Seattle-style teriyaki-inspired dense bean salad! Full of protein and fiber, and it’ll feel like you just visited your favorite Seattle teriyaki joint. Store leftovers in an airtight glass container, and the flavors will develop further over the week. Ingredients For the Salad 1 tablespoon neutral oil (like canola, safflower, or vegetable) 1 can SPAM, diced ½ large red onion, diced 1 can garbanzo beans, drained and rinsed (or your favorite canned beans) ½ cup cooked shelled edamame 1 cup baby portabella mushrooms, diced (or your favorite variety) 1 cup mixed chopped vegetables (e.g., bell peppers, carrots, celery) 2–3 stalks scallions, chopped Salt and pepper, to taste For the Dressing ½ cup extra-virgin olive oil ¼ cup light soy sauce 2 tablespoons granulated sugar ¼ cup freshly squeezed lemon juice Pinch of MSG For Topping Kewpie mayo Sesame seeds or toasted sesame seeds Instructions 1. Heat a skillet or frying pan and add the neutral oil. Pan-fry the diced SPAM and onions over medium-high heat until the SPAM is golden brown and slightly crispy. (If you prefer, you can skip this step and use SPAM straight from the can and raw onions.) 2. Assemble the salad. In a large bowl or salad bowl, add the SPAM, onions, garbanzo beans, edamame, mushrooms, mixed vegetables, and scallions. (Optional: Toss in some diced pineapple for a sweet twist, as seen in the video!) 3. Add salt and pepper to taste. 4. Make the dressing. In a small bowl, whisk olive oil, soy sauce, sugar, lemon juice, and MSG until the sugar is dissolved and the mixture is smooth. 5. Drizzle the dressing over the salad and toss until evenly coated. Top with a generous drizzle of Kewpie mayo and a sprinkle of sesame seeds.
